Allowing Pasta to Drink to Its Fill

OMG – You are going to love this dish!  Alright, perhaps you will like it a LOT, or maybe you’ll think it’s just okay.  I don’t really know. BUT I do know that I love it and have made it for company twice to rave reviews.

The pasta is cooked in an unusual way and in a strange manner I swear I felt really connected to the pasta cooking.  I know this sounds like a crazy person talking…well when you read the recipe you’ll see how that could happen (I think).

2 TBSP olive oil, more if needed, 1 shallot or small onion chopped, 1 TBSP minced garlic (I just use as many cloves as I want), 2 cups of crimini or shitake cleaned and sliced, 1/2 pound of cut pasta like gemelli or penne, salt and ground pepper, 3-4 cups of vegetable or chicken stock, 1/2 cup dry white wine or water, 2-3 boneless chicken thighs diced, chopped fresh parsley (optional), freshly grated Parmesan cheese.

Put 2 TBSP olive oil in large deep skillet over medium heat.  When hot, add shallot, garlic and mushrooms. Cook turning occasionally, until mushrooms soften and begin to brown on edges, about 10 minutes.  Add pasta and cook stirring until pasta is glossy and coated with oil about 2-3 minutes.  Add salt and pepper and wine – stir and let liquid bubble away.

Ladle stock into skillet, 1/2 cup or so at a time, stirring after each addition and every minute or so.  When liquid is just about gone, add more.  Mixture should be neither soupy or dry.  Keep heat at medium and stir frequently.

After about 10 minutes, test pasta – you want it to be tender but with a bit of crunch.  When pasta is about 4 minutes away from being done, add the chicken and stir to combine. Continue to cook till chicken is done (white on the inside) and the pasta is how you like it.  Taste and adjust seasoning, grate cheese on top and garnish with parsley. I will post Mark Bittman’s column on making this dish because he’s a better  writer than me.

Inspiration or food for thought in this case and no pun intended, for the blogs comes from many different sources.  My friend, Gail who has been popping up in the blogs lately, is one of those resources.  I had strongly suggested she write a blog herself, however, she thought not – so I invited her to be a guest contributor whenever she wished.  Well so far although she hasn’t written any of the blogs, she is an endless resource for ideas.  Sometimes directly and sometimes by chance and this is one of the latter.

Gail has taken up baking this year and as a good neighbor and friend, I try to be  always available be if for taste testing or taking extra goodies off her hands.  She showed up last week with a batch of cornbread muffins.  Tiny tasty morsels they were too.  Just the size where if no one was watching you could pop the whole thing in your mouth.  And in mixed company, they provide two or three good bites.

The cornbread muffins were delicately flaky and crumbly and with just the right amount of sugar.  This is the kind of cornbread you want to eat for breakfast or with a cup of coffee for a mid-afternoon snack.   Like the Mother’s Day cookies, eventually I had to put some in the freezer and you know why!! They kept calling out my name….

Sweet cornbread seems to be more popular in the Northeast than its savory relative, especially in Barbeque Rib restaurants.  From what I understand, no self-respecting Southern cook would serve sweet cornbread with barbeque and the logic is correct – you wouldn’t eat a blueberry muffin with a stew so what’s with the sweet bread served alongside a rack of saucy ribs?   It’s like the different cornbreads have created yet another Mason-Dixon line!!!

I say decide for yourselves whether you want to join the sweet cornbread lovers or the savory devotees.  Following are recipes for both types.

Corn muffins, sweet cornbread, muffins, breakfast muffin

Cornbread Muffins

Gail’s Corn Muffins

3 cups flour,  1 cup sugar, 1 cup medium cornmeal, 2 tablespoons baking powder, 1 1/2 teaspoons salt, 1 1/2 cups milk, 1/2 pound unsalted butter, melted and cooled, 2 extra large eggs.  Preheat oven 350 degrees.

Line 12 muffin cups.  In bowl of an electric mixer fitted with paddle attachment, mix the flour, sugar, cornmeal, salt.  In separate bowl combine milk, butter and eggs.  With mixer on lowest speed, add wet ingredients  into the dry ones and stir till well blended.  Spoon the batter into the cups filling each one to the top.  Bake for 30 minutes, until tops are crisp and a toothpick comes out clean.  Cool slightly and remove from pan. * recipe from Food Network.com

Southern Style Cornbread

Southern Style Skillet Cornbread

2 cups cornmeal, 1 1/2 cups flour, 2 teaspoons salt, 2 teaspoons baking powder, 1 teaspoon baking soda, 3 eggs beaten, vegetable oil for the skillet, 2 cups milk, 1/4 cup melted butter and some to brush the tops.

Preheat oven to 426 degrees

Put oil or shortening in 10″ iron skillet and place in oven to preheat while making batter.  Combine flour, cornmeal, baking powder and soda in bowl.  In another bowl, whisk together eggs, milk and eggs.  Add to dry ingredients and mix until the consistency is like pancake batter. With heavy oven mitts, remove pan and twirl to coat all sides of skillet.  Pour in batter, return to oven and bake for 20-25 minutes until the top is lightly browned and toothpick comes out clean.* Recipe from About.com

Where Else?

It was late afternoon, the sun was shining and I was driving along Lake Terrace in Bradley Beach which runs alongside Fletcher Lake and there she was – a large Canadian Goose was leading her little goslings by the side of the lake.  I sped home, ran in the house to get my camera and raced back to the lake.  As I slowly drove,  I scanned the lakeside looking for the darling feathered family.  NOTHING, nowhere to be seen.  Then as I arrived at the part of the road that veers away from Fletcher Lake, I noticed a lot of little bobbing heads on the grassy bank.  There was Mother Goose and it looked like Papa had joined her while the goslings ate.

Timidly but quickly I hopped out of the car, camera in hand ONLY to be  stared down by Mama Goose herself.  She watched me like the proverbial hawk lest I make any sudden moves towards the babiesl

How FRUSTRATING is it to NEVER get a human being on the other end of the line?  We have all been there, listening to the endless electronic  loop of the patronizingly solicitous voice, telling us to JUST WAIT!! “We appreciate  your patience”  – I don’t want to be patient I want to talk to someone about my problem, my issue, my need, my dilemma, my complaint, my order, my subscription, my freaking whatever!!!

Now I know I don’t have any patience;  for one thing my husband always tells me so….and then being Type A+ doesn’t help and of course living in New York City where being demanding and impatient are practically not only inherent rights, but are also considered marriage material personality traits, well you can see where I’m coming from!!!

So now that the days of Operators and in many cases, Receptionists have gone the way of the Underwood typewriter and the rotary telephone, what we are left with is HI-TECH inefficiency! What is everybody doing who works in the company you’re calling – WHILE you’re waiting?  I wonder.

How do you get to that person, THE person who can answer your question, fix your problem, straighten out the situation?  I’ll tell you!

I Heart Manhattan

The Big Apple, The Big Onion, The Capital of the World, who doesn’t love New York City?  No don’t bother to answer,  I KNOW there are people who NEVER come to New York City, who are afraid of  The City, who think there are SO many people here (that’s true there are… so?).  Well I LOVE NEW YORK!“As Time Goes By“. And there are so many many reasons that I want to share some of them with you

Here’s one:

24 hour diner, corner coffee shop, a Seifeld moment

Diagonally across the street from where I live is this corner coffee shop.  NOT that kind of coffee shop, there are not frappacinos or caramel lattes here.

This IS New York City at its finest.  Every neighborhood has one or two or even three within a couple of blocks of each other.  The coffee shop is a culinary mainstay of  The City.  Open 24 hours, you can have blueberry pancakes delivered to your door at midnight if you want.  OR,  after a long day at work and you don’t want to cook,  going to Gracie’s for dinner is a treat – the best part is that if you are with your husband or friend and you want meatloaf and they want moussaka, you both can have whatever and at the same time and at a reasonable price.  OR you can meet your friend for breakfast during the week when it is not so crowded and while you are eating your eggs or bagel, the coffee cup is bottomless!

Did you get a traditional gift?  Did your kids bring you breakfast in bed? Maybe Dad is going to take Mom and the kids out to dinner. When grown-up kids go home, they often bring a bouquet of flowers or a plant to their mother.  Last Saturday I saw a young man with a box of Whitman chocolates in his grocery cart.  Mother’s Day cards were flying off the shelves across the country.  Hallmark was happy, FTD was happy, it’s nice to know how much happiness we Mothers can spread around!  Then there’s the daughter-in-law to her mother-in-law gift and that often falls into the lovely scarf category and the dutiful From Both of Us card.

Anyone who knows me (and most of you do) know that the traditional and ordinary are not for me….after all, I have a daughter named Chiara not Mary,  a granddaughter named Finley Ray, not Anne, a cottage with a raspberry colored wall in the living room, a vanity plate on not one but two  cars in two states and a set of mismatched (on purpose!) set of bakelite flatware.  And so what did my dear children give me?

Son Joel called from California,  adopted daughter Christine called from Washington DC, my sister called, my sister-in-law called, daughter Lizzy called from California. daughter Chiara called from Boston, granddaughter Finny made a video call and wished “Happy Mommy Day GiGi” – Lordy, that WAS cute.  Nothing so unusual there at all, in fact downright expected wouldn’t you say? BUT, BUT, my son-in-law Tom, well he truly saved the day! This is what I got for Mother’s Day…..
