How would you like to make some quick Ice Cream Sundaes this very Sunday?  Raise your hand if you love Oreo cookies?  Now raise your hand if you love ice cream (who doesn’t?).  Good now that we are all on the same page, let’s make some Ice Cream Sundae Oreo Cookie Cups.

Ingredients

Ingredients:
– 2 sticks salted butter
– 3/4 cup granulated sugar
– 1 cup brown sugar
– 2 eggs
– 2 teaspoons vanilla
– 3 1/2 cups all-purpose flour
– 1 teaspoon baking soda
– 2 cups semisweet chocolate chips
– Oreo cookies
– vanilla ice cream
– magic shell or chocolate syrup
– sprinkles

Instructions:
1. Preheat oven to 350 degrees F. Beat butter, granulated sugar and brown sugar in a mixer until creamy. Add eggs and vanilla. Mix. Add dry ingredients and stir in chocolate chips.

2. Break up 12 Oreos and add them to the dough. Mix. Scoop the dough into a muffin pan. Bake for 15 minutes.
3. In a large bowl, combine one carton of softened vanilla ice cream with 24 Oreos. Freeze for 45 minutes, or until the ice cream is firm.

4. Remove the cookies from the oven. Press a sprinkle container into each cookie to make a cup. Let the cookie cups cool.

5. Remove ice cream from the freezer. Fill each cookie cup with one scoop of ice cream. Top with magic shell and sprinkles. Enjoy!

Has this recipe got my name written all over it or What?  What could be more up Pbenjay’s alley than not one BUT TWO of my favorite foods;  Peanut Butter and Jelly sandwiches and best of all Ice Cream!  This recipe comes from Honestly YUM. The following is from that web site:

“This recipe is so simple I can’t believe I hadn’t thought of it before. I mean, who wouldn’t love a dessert version of a PB&J sandwich. It’s pretty much my go-to sandwich whenever I’m too lazy to make dinner. The jam ice cream can be made with any jam you like, but I love blackberry jam with the seeds studded in there. You can also make our blackberry bourbon vanilla jam. The gluten-free peanut butter cookies are the most intensely peanut butter cookie you’ll ever have. I’ll admit I was skeptical about the gluten-free part, but they’re really delicious. Resist the temptation to eat them straight out of the oven. Combine the two and you’ve got the ultimate ice cream sandwich that will be the envy of any 1st grader.”

PEANUT BUTTER AND JELLY ICE CREAM SANDWICHES (GLUTEN-FREE)
Ingredients:
1 cup of smooth peanut butter
1/2 cup of brown sugar
1/2 cup of granulated sugar
1 egg
1/2 teaspoon of baking soda
flake sea salt
1 jar of blackberry jam
1 quart of vanilla ice cream
Directions:
To make the jelly ice cream, scoop vanilla ice cream into a loaf pan and drop dollops of blackberry jam between each scoop.
Cover with plastic wrap and freeze preferably overnight.
To make the gluten-free peanut butter cookies, pre heat the oven until 350 degree. Combine the smooth peanut butter, sugars, egg, baking soda in a bowl and whisk to combine.
Using a tablespoon, roll a ball of cookie dough in a ball.
Lay the balls on a baking sheet lined with parchment paper
Make crosshatch patterns with a fork on the top of the cookies.
Sprinkle sea salt on top.
Bake for about 10-12 minutes until golden brown.
Allow to cool completely
To assemble the sandwiches, place on scoop of jam ice cream between two cookies.

Oh I am so excited about  this recipe because once again ice cream and alcohol are combined to make a delicious dessert.  

1 pint vanilla ice creamroom temperature**

1  1/2 cups strawberries

1/4 cup milk

1/4 cup cointreau

In a blender, puree all ingredients till smooth.  Divide among 4 glasses.

** Microwave on high for 10 second intervals until it reaches desired consistency.
