Those of you who are regular readers know that I am passionate about a few things; ice cream is one of them.  I just love the summer at the shore because ice cream is so available.  We have two great ice cream shops, each with a great history and better yet, delicious ice cream.  So what could be better than photos of ice cream cones in lots of flavors?  Tiffany’s current window dressings are BETTER.  Why? Oh I am so excited about  this recipe because once again ice cream and alcohol are combined to make a delicious dessert.  

1 pint vanilla ice creamroom temperature**

1  1/2 cups strawberries

1/4 cup milk

1/4 cup cointreau

In a blender, puree all ingredients till smooth.  Divide among 4 glasses.

** Microwave on high for 10 second intervals until it reaches desired consistency.

You can always tell when I’m dieting;  either the blogs are all about healthy food, fruits and vegetables OR the blog becomes my fantasy virtual dessert cart.  I can see that this round of the 17 day diet is going to be tough since it is only Day 2 and already I’m posting recipes with ice cream (my favorite food) and alcohol.

Gail, a steady contributor to this blog sent me a list of summer desserts (source: Real Simple) and I knew right away that there were several that were blog-worthy because they are simple, quick and tasty.  I know that just from reading the recipe, not sure how much influence my recent abstinence from carbs and sugar and alcohol might have on this choice.  Whatever, believe me, these are going to be good.  For the next several Tuesdays I will be posting one of these summertime desserts.

Blueberry-Gin Sundaes

1 cup blueberries

1/3 cup gin

1 pint vanilla ice cream

In a small saucepan, combine blueberries and gin.  Simmer, stirring frequently, until berries burst and the mixture begins to thicken, 5-8 minutes, let cool.

Divide 1 pint of vanilla ice cream among bowls and top with blueberry sauce.

Make and refrigerate the blueberry sauce up to a day ahead,

Yesterday Finley Ray arrived for the weekend and in less than 24 hours we already had a few adventures.  We went to a book fair and she was in her element for sure.  She just plopped down on the concrete floor and went through several books discarding those she decided were not worth taking home and choosing very carefully the keepers.   The Ladies auxiliary had set up a hot dog concession and the wafting odor of hot dogs was too irresistable for her, so one hot dog with ketchup was ordered.  Then it was off to the boardwalk where we didn’t go to the beach per se because rain was imminent but still we had time to take off our shoes and walk in the sand.

Picking Papa Pete up at the train station was going to be a treat in hopes that we would see the “big” train.  Alas he arrived before we did.  Still we had another stop, this time to the Laurie’s Vegetable & Fruit stand in Neptune.   Laurie  is so friendly and warm and since it had begun to rain and we were the only customers at the time, she invited Finley up onto the counter to have some fresh blueberries.  The fruit stand was originally a gas station in the 1930’s and there were still some remnants of its origins and don’t you know, little Miss Finny announced that this was a garage!  Yes,I have a genius granddaughter.  The rain was dripping heavily from the garage doors that were opened and Fin realized as every little child does that running back and forth in the rain can be so much fun.  First of all you get big drop marks on your clothes and your hair gets wet, water runs down your cheeks and soon you have water squishing between your toes in your sandals (hers were jelly thank goodness).

Dinner on a TV tray is fun too especially if you are getting to watch a movie at the same time!  I think Finley had her first corn on the cob Friday night because she didn’t seem too familiar with the concept.

It was a no-nap day due some unforseen circumstances and the fact that Finley and I hit the road shortly after she arrived.  So by dinner time I could tell she was fading but she refused to cave in until after her two movies had been seen.  First a bath in Gigi’s blue drink bucket ( a cottage without a bathtub can be a real drawback when you have kids around), then the movies and we are off to bed.  A promise made to read two books seemed unlikely as I was pretty sure she wouldn’t insist.  Sure enough she was just about asleep by the time I finished one of the new books we had bought at the Book Sale.

She turned her head, closed her eyes and fell into a deep sleep.  So deep and so fast that I ran downstairs to get my camera to capture this photo.  Take heed Mommy, I used a flash! Well of  course it was PAST her regular bed time, lol. lol.

Saturday morning , errr, rather early in  the morning, Finley was thoughtful enough to get out of bed and go downstairs and bring up two videos that she thought we all should watch together in bed.  So of course we did.

She was very busy around the house that morning, actually helping me clean.  She insisted on having a paper towel spritzed with Simple Green so she could wipe down tables, cabinets and anything else I pointed at.

We plopped her in the stroller and took off to the Book Fair again, this time so Peter could peruse the aisles in search of literary treasures.  Finley made off with 2 more books and surprise, surprise, one of them is Cinderella.  It was so bloody hot and I was hoping to get over to the North End beach to see the sand sculptures.  By the time we walked east to the boardwalk, and then to North Beach, I was already over it as far as viewing any sand castles.  Just as we approached the staircase to the beach, Finny announced that she had to pee.  Just GREAT-no bathrooms at this end of the boardwalk, the restaurant located there is closed and so I had to walk all the way back to the Pavillion and talk my way past the ticket taker to get her onto the beach where there were some bathrooms.  NOT pleasant restrooms at all,  and we had to cut the line as she was jumping up and down literally so who would make a little girl wait? Truth be told I don’t think I have ever been on a public beach with decent bathrooms. Sorry to say that the sculptures weren’t worth the hike, the sun and the hot sand 😦

We headed home by way of Day’s Ice Cream because having ice cream in the middle of the day is just the perfect pick-me-up on a blistering summer afternoon.  The girls in the ice cream shop tried to convince Finley that she wanted strawberry because it was pink or party cake and after she tasted each and turned up her nose, she ordered just exactly what she told me she wanted;  soft vanilla with sprinkles on top!

Finally we made it to the beach.

At first she didn’t even want to get her feet wet and she raced back to the sand each time a wave lapped anywhere near where she was standing.  Peter finally got her into the water by splashing her and letting her splash him which brought forth shrieks and uncontrollable giggles.  Soon she was sitting down and letting the waves foam up around her knees.  And before long, she was in the water being held, swung and dipped while wave after wave crashed into her each one eliciting one of Finley’s ear-piercing shrieks and I just know how much the people who were in sand chairs down at the water reading, really and truly loved that sound!

I wish I dared to get in the waves with the camera so I could have taken a photograph of her loving having the waves crash on her.  Finally, it was strongly suggested that she might want to make a sand castle…

After a bath to remove sand from places one would never expect sand to land, Fin was ready for bed.  Again,it was a one book night because this little water baby was very tired.

Sunday was tea party day for Finley Ray.  I was helping my friend, Jane who runs a Tea Room and so about lunch time, Peter brought Finny over to the Tea Room so she too could attend a Teddy Bear Tea as they are known when kids come to High Tea.

Believe it or not she ate EVERYTHING!  It was a blistering hot day so off to the beach we went and this time there was no hesitation.  Finley was shrieking through the waves as soon as she hit the shore line.  This time she was so sandy that only a shower would do to get her clean.

It's America's Birthday Party

I was looking forward to receiving some Fourth of July memoirs and by the way, it’s certainly NOT too late since next Monday is the day we are going to celebrate;  Fireworks, picnics, cook-outs, pool parties, ice cream sundaes, parades, floats, marching bands…whatever!

TASTY TIDBITS TUESDAY

Don’t want to eat your veggies? That’s just so…what? 50’s? Nowadays everybody knows you just gotta eat a lot of vegetables and this one easy and delicious way to ingest a bunch of vitamins and anti-oxidents and it is absolutely delicious.

1 TBS Olive oil

1 pkg (8 oz) chopped onion

1 TBS peeled garlic

4 small (2 lbs) zucchini, 1/2 inch dice (about 6 cups), divided

1 carton (32 oz) Chicken stock

1/2  bunch of cilantro, stemmed, chopped (about 1 1/4 cups)

1 bunch green onions, thinly sliced (about 1 cup) divided

Salt and pepper to taste

You’ll need: Handheld blender/Immersion blender

Heat olive oil in stock pot on MEDIUM-LOW. Add onion and garlic; reduce heat to LOW.  Cook, stirring often, about 10 minutes, until onion is soft and translucent, but not browned.

Add about 4 cups zucchini to pot.  Cook 5 minutes.  Add stock; bring to a simmer on HIGH.

Add half the green onions. Reduce heat to MEDIUM; simmer 2 minutes.  Remove from heat.  Add cilantro.

Puree soup carefully with handheld blender until smooth.  Return to MEDIUM heat. Add remaining 2 cups zucchini.  Simmer 8-10 minutes until zucchini is tender. Season to taste with salt and pepper; ladle into warm bowls.  Garnish with remaining green onions.

Option:  Garnish with Creamery Goat Cheese and thinly sliced radishes.

Thank You!

I have so much to thank you for and I know I’ve said it before, this day, this Father’s Day, I feel the need to say it again.  And this time it’s going to be harder because I don’t know if you can hear me and I don’t have an address where to send this letter.  Of course, I can always fall back on my Catholic upbringing and hope and assume you are in heaven and in that case, you must be with Mom too.

But this day is about you;  As an only child who lost her mother when I was 9, you played a bigger than life role in my life.  All little girls adore their fathers, I was certainly no exception and for those few years when you had to be both Mommy and Daddy, you were my whole world.  I wanted to be Daddy’s Little Girl forever.

It must have been really hard for you!  I didn’t fully realize just how hard it must have been until I was in my own adulthood.  Like all children, being totally self-centric, even as I grew up I only thought of my own pain and loss. I don’t know at what point it occurred to me just how young you were and how the burden of being a single parent must have been on you AND then it was even later before I realized the daily pain you must have felt losing the love of your life, my mother, Helen.  She was only 33 years old so I guess you were probably around the same age.   Those evenings around the supper table just you and me and the empty chair are forever ingrained in my mind while you sat and stared into some place and time not in the present.  A broken heart, a full-time job to support me, a house to take care of, a child to rear and feed and nurture. Wow Dad, you rocked!

I am ever grateful to you for the parenting and nurturing you gave me that set me on the path of the person I’ve become.  Along the way, I ‘ve made a lot of mistakes, some which you tried to talk me out of and some which I guess I had to experience in order to learn a lesson.

But this day is just not about my lamenting the loss of my dear Dad, it’s also about memories held dear and thankfulness for hundreds, no thousands of big and little things, ideas, principles, values, and fun times.

So thank you Dad for so many memories….teaching me to tie my shoes, getting me a dog, letting me sit on your lap as you read even when I was way too big to do so.  For making me kites from road maps and making them bigger than any store-bought one with long tails, and letting me take even more maps to cover my school books, for letting me be a tomboy and because you worked for J & E Stevens, bringing home the best cap guns and holsters ever.  Thank you for teaching my friends and I how to water ski, for taking me along with you to pick the first dandelions of the season by Wadsworth Falls,  for giving me a jack knife and trusting me with it.  For teaching me how to fish and taking me deep sea fishing with you, for building stilts for me and for teaching me about shooting marbles.  Thank you for finding the money to send me to St. John’s School where I received such a good basic education, that those of us who went there were all bumped up an English grade in Junior HS.  You were the one who fixed the broken zipper on my dress an hour before I was supposed to leave for a dance and you were the one who was angry at me when you found out I was smoking!  Thank you for instilling in me the joy of reading, the value and satisfaction of growing flowers and vegetables, for taking us on vacation to the beach either in Maine or Rhode Island where I learned to love the smell of the ocean and body surf the waves. 

Thank you Dad for standing by me when I made the decision to get a divorce, for getting me a calf and raising it so we could slaughter it and have beef for a year, for teaching me to drive a stick shift car and for letting me play jacks on the dining room floor even though it probably scratched it up a lot.  I have great memories of you and Susan’s Dad, Bill and us all sledding at night down Spencer Drive, and of the clam bakes, pig roasts and other block parties that I know you were the instigator and I inherited that gene and passed it on to my own daughter.

Thank  you taking me clamming with you and teaching me how to eat clams on the half shell even when I was still small enough to sit in the bushel basket where  you put the clams you found.  For being the “fix-it” Dad that you were fixing all kinds of things around my apartment and house for years and years.  For always getting me a big pumpkin at Halloween and carving the best faces!  You were so involved in making the holidays special whether it was pumpkin carving or coloring Easter eggs with me and being the Dad in the neighborhood who got all the fireworks for Fourth of July and giving me sparklers, black snakes and poppers. Thank you for letting me plaster pictures of Elvis Presley all over my bedroom door and for buying me his records and my own Hi-Fi portable record player.

Thank you keeping the memory of my mother alive and marrying my stepmother so I wouldn’t grow up motherless.  I miss you Dad – there are many times when I reach for the phone to call you and ask you something and then I remember I can’t do that anymore.  This past week, I drove to CT to see Susan and on the way I passed the Stella D’Oro Cookie Factory, where when we drove past it on our way to see Grandma, we could smell the cookies baking and I knew we were getting close to her apartment.  Well the cookie smells have been gone a long time since the factory closed the manufacturing end and just used the building as headquarters.  Two days ago, I was saddened to see a For Sale sign on the building.  Just another incident in the passage of time and a reminder of days gone by, days spent with you Dad.

This seemed like the perfect Sunday night supper, however that never happened! It turns out that this very night, this Tuesday was the perfect night for this meal.  I made the components of the dish during the day and put it together when we got home from the movies.  The time spent is all in the prep so it is a good dish to serve if you are going to be busy at night but have some free time during the day or night before.

TORTELLINI SUMMER SALAD

1 pkg  (20 oz) of cheese tortellini

1 red sweet pepper, cored, thinly sliced (about 1 cup)

1 red onion, peeled, thinly  cut ( about 3/4 cup)

1 small bunch of asparagus, trimmed, cut in 1  1/2″ pieces

Sea salt and cracked black pepper to taste

2 TBS Wegman’s basting oil*, divided

1 zucchini, trimmed, 1/4″ dice (2 cups)

3 TBS pine nuts

1 pint of grape tomatoes, halved

1 pkg (7 oz) Italian Basil Pesto Sauce

1/2 tsp Tobasco Sauce

15 basil leaves finely sliced

Preheat oven 450 degrees

Cook pasta according to directions, drain, rinse with cold water and set aside,

Season pepper, onions, and asparagus with salt and pepper;  toss with 1 TBS basting oil.  Transfer to baking sheet; arrange in single layer.  Roast 10-12 minutes, turn halfway thru cooking time. Remove from baking sheet and set aside.

Season zucchini with salt and pepper; toss with remaining 1 TBS oil. Transfer to baking sheet arranged in single layer.  Roast 5-7 minutes until tender but not browned.  Remove from oven.  Add to pepper mix. Chill 1 hour.

Toast pine nuts in small pan on MEDIUM, 3 minutes, stirring till slightly toasted.  ( I used a toaster oven). Remove, set aside.

Add tomatoes, pesto, Tobasco sauce, basil, pine nuts, and veggie mix.  Season to taste with salt and pepper. Serve chilled

* Basting Oil is basically Olive Oil and chopped basil and parsley.

Chef Tips – Prepare 1 day in advance for the flavors to meld.  You can substitute  Tomato Pesto sauce .

I guarantee you will be delighted with this crisp and thirst-quenching non-alcoholic drink.  I served it with dinner the other night, however my intention had been to serve it in the afternoon with some light refreshments or with lunch.  And when you are hot in the afternoon the way I was when we came home from the beach, this drink really hit the spot.  The prep work is a little bit of work but the end result is terrific.

Cool and Refreshing Cucumber Cooler

3 cucumbers – peeled, seeded, coarsely chopped

1/4 -1/2 cup water

1/2 cup of fresh mint leaves

1 lime thinly sliced

1 bottle of club soda

2 TBS agave nectar or honey

Puree the cucumbers and water in a blender.  Pour through a fine sieve, pressing on the solids – you should have about 2 cups of cucumber juice (it will be slightly thick)  Refrigerate overnight if desired or for at least a couple of hours.  

When you are ready to serve, place the mint leaves in the pitcher and bruise lightly.  Add the cucumber juice and the lime slices.  The recipe called for 24 ounces of club soda, I used a whole bottle of seltzer instead.  Add the agave nectar and stir to combine.

To serve: Pour over ice-filled glasses and enjoy!

Footnote: I prepared my batch in a covered pitcher (although not airtight) and even the next day there was enough fizz in the mixture to make it delicious and refreshing.

A very dear and old friend of mine poked me and cheered me on and up about my blog.  So this one’s for her, Susan Celtic Lady!

This side dish is perfect for  a quick meal.  Well in NYC, you know it’s pretty easy to order in and also very easy to buy a Roasted Chicken;   Seems like all the grocery markets have them as well as little chicken shops.  I know the phrase little chicken shops sounds funny to anybody outside of the City, but we really do have little storefront shops that cook and serve chicken, mainly grilled or whole roasted AND they deliver.   So a couple of Sunday nights ago, I had the roasted chicken and needed a quick and healthy (always)  side dish to go with it.

Sauteed Spinach and Tomatoes

1/4 cup olive oil

4  small shallots, thinly sliced

1 pint grape or cherry tomatoes

2 bunches (1  1/2 lb)  spinach (trimmed and washed) – I used two bags

coarse salt and ground pepper

grated Pecorino Romano cheese

In a large skillet, heat the olive oil over medium-high.  Add 4 shallots and cook stirring often until soft and starting to brown, about 4 minutes.

Add  cherry or grape  tomatoes and cook until tomato skins are split and shallots are golden brown, from 2-4 minutes.

Gradually add the spinach, season with coarse salt and ground pepper, and cook until tender, 3 minutes or until all is in skillet and wilted. 

To serve, sprinkle with the grated or shredded cheese.
