Mom to the rescue

SIX WORD MEMOIR MONDAY

Yesterday was the official pay back day – the day we Moms get recognized for years and years of picking up, wiping up, cleaning up your toys,  planning meals, shopping for meals, driving kids to whatever, going to PTA meetings, helping with homework, cleaning the house, taking the dry cleaning in, doing the laundry,  standing on the sidelines cheering our kids on in their chosen sport, making birthday parties special, putting the new roll of toilet paper in the bathroom, taking temperatures, wiping noses, bringing tea and toast to the sick ones in bed, walking the floor in the middle of the night with the crying baby, changing our clothes 3 times a day because of spit up on our shoulders, buying the Easter candy and hiding the baskets, putting band-aids and kisses on knees and elbows, bathing and washing more than one person and not yourself, cooking dinners, making lunches, buying the sugared cereal once in a while, baking cookies and cupcakes for school parties, sitting by the pool while you have your swim lessons, taking you to the playground, filling your Christmas stocking, sending you birthday cards even though you’re in your 30’s, helping to plan a wedding, buying a wedding gown, helping you write the entrance essays for college, making French toast or pancakes for your sleep-over guests, car-pooling you and your friends to nursery school,  teaching you how to knit, sew, garden or cook, insisting you make your bed so you learn some sense of responsibility, taking you for your first real haircut, waiting for hours to use the phone while you chatter away to your friends (pre-cell phone days), reading books to you, singing lullabies when you couldn’t or wouldn’t sleep, taking you for your check-ups and consoling you with a Happy Meal when you got a shot, driving 15 miles to a special store because you only liked to wear certain corduroy pants,  wiping away your tears when you had a fight with a friend or worse – a break-up, giving you as much advice about love and life as you would listen to, making sure you were safe by calling even when you didn’t want me to, teaching you how to tie your shoes, cleaning up the vomit and accidents from your pet, buying a prom dress, telling you from the day you were born how pretty or handsome you really are and loving you till the day I die.

Now having said all that, I hope all you mothers reading this got at least a card, maybe a gift or a dinner or brunch – BECAUSE we deserve it, don’t you think?

Could be you’re ecstatic, disappointed, relieved, glad, sad, angry, upset or whatever…try to express it in just 6 words.

One Life, Six Words, What’s Yours?  The quest continues and the challenge remains – can you? Will you? – try to put your life into just six words, no more, no less!  Well my life, you say, is way too big and complex to distill into six words! Maybe, maybe not.  Some GREAT writers have done and each week I post about 5 Six Word Memoirs from the book, Not Quite What I Was Planning. 

Some weeks we focus on a theme and this week’s was supposed to be about FOOD, our love of, our abstinence from, from taste sensations to tasty tidbits and tasty recipes and of course the throes of dieting. WHATEVER you are thinking or feeling about food is your source of a Six Word Memoir.

                                                            THURSDAY’S TOP TEN

With a birthday approaching, an onslaught of nostalgia is taking over;  now more than ever, memories of childhood toys, songs from my own angst-ridden high school years and thoughts  and memories of things I grew up with.  Household items I saw my mother use and my own childhood experiences that I know my kids never saw or had and now that they are grown up and having kids of their own, these things are lost to yet another  generation and some gone forever, some will be found in antique shops.

  1. Rotary Phones:  telephones with dials, with phone numbers that began with letters like DI for Diamond or WA for Waldorf and sometimes with a party line. Can you imagine picking up the phone to make a call and hearing other people already talking and it isn’t your sister on an extension (there were none) in another room.  It’s a whole other household and each “party” had their own special ring.  It was rude to keep picking up the phone to see if they were still talking and it was definitely rude to listen in on a conversation.  Life is so much easier now, all you have to do is be near some idiot on their cell phone and you can catch the entire conversation.
  2. Transistor RadiosI remember the birthday that my father gave me my own transistor radio; it was green and in a leather carrying case.  Loved it! Of course I couldn’t download 400 of my favorite songs and it didn’t cost anywhere near as much money.
  3. Darning Egg: I watched my grandmothers darn and I’m not sure if I ever saw my mother darn a sock but one thing I’m sure about is my kids never saw me darn a sock and although I had a darning egg (don’t remember how I acquired one or why), I doubt they ever saw it.  Why darn socks?  The world was not so disposable then and my grandmothers had lived through the depression and they knew the value of saving a pair of socks for a couple of more months.       
  4. Hot Water Bottle: I think most of them were made of dark red rubber with a stopper and like a few other “vintage” cures it was used for a lot of ailments.  A stomach ache, a headache, cramps…you name it, Mom would give you a hot water bottle and tuck you into bed.  Sometimes, your grandmother might even knit, crochet or sew a cover for the bottle and then it didn’t have to get wrapped in a towel.
  5. Wringer Washers:  These were on their way out when I was growing up in the 50’s but there was one in our basement for a long time.  Wow, imagine doing a load of clothes and diapers in this tank like washer and then instead of the machine spinning out the water, you fed the clothing between two roller and cranked it and squeezed the water out. Wash day probably was a half day’s work then.
  6. Milkman: Life had its conveniences even then and having the milk delivered to your doorstep was one of them.  Every back doorstep had a milk box on it.  You would write down your order for the next delivery if you wanted something extra like heavy cream or buttermilk.  Real glass bottles with round paper caps;  AND in the winter when the temperature really dropped the cream literally rose to the top and pushed up and out of the bottle like a frozen milk pop.  Sometimes I got to lick that frozen creamy popsicle.
  7. Tooth PowderStrange but true and not exactly popular by the time I was old enough to understand what it was.  Now I collect some of the old tins when I find them; but then, well who wanted to use yukky powder on their teeth when the latest thing was “STRIPE” toothpaste. So cool!
  8. Pressure Cooker: These were scary things.  Never knew what Mom was cooking in it but it whistled, steam escaped and above all, we all heard stories about the pressure cooker lid blowing off.  From what I understand, a pressure cooker was not for the inexperienced cook, but it cooked food quickly.
  9. Electric Frying Pan: I received one as a wedding present in 1968 and used it for many years.  I don’t know if they still sell them but I might look into getting one because they were great!   Large with high sides and a temperature dial and a lid with a movable vent and best of all you could cook on a counter or tabletop which is a grand idea when all four burners are in use.  I wonder why I stopped using it, I wonder where it went – maybe with the “ex”?
  10. Telephone Dialer:  Going back to the Rotary Phone – ladies didn’t want to break a nail or chip their polish so they used a “dialer”.  Often given away as an advertising premium, these dandy little helpers enabled you to quickly dial a number and leave manicure intact.  Dialers were around a long time;  there are antique dialers, Tiffany dialers as well as the plastic give-aways and lots of secretaries had a combination pen or mechanical pencil with a silver ball at the end to be used as a dialer. Interesting!

TASTY TIDBITS TUESDAY

Italian parsley

This is an economical and tasty dinner entree, tasty too!  Tonight’s meal will be Chicken Thighs with Green Sauce, Quinoa, and sauteed Broccoli.

8 thighs, skinned**

1/2 cup olive oil

3 (or more) cloves of garlic, peeled and cut in half

30 sprigs of Italian parsley

8 whole scallions

Salt and pepper

Arrange chicken in skillet, pour olive oil over them. Scatter garlic pieces around, lay parsley and scallions over top as to “smother” chicken while cooking Lightly   salt and pepper to taste.

Cover skillet and cook on very low for about an hour.

Uncover skillet, using a fork remove the parsley, garlic and scallions and put into blender and puree for a few seconds.  With blender still running, add the juices from the pan and puree until a smooth green sauce is obtained.  Remove chicken pieces to platter and pour sauce over them evenly and serve.

** if using thigh cutlets, cut cooking time in half or less until thighs are cooked through.

The old glasses in the eye trick sent Finley into spasms of giggles.   The apple doesn’t fall far from the tree because her mother used to crack up every time Peter did this for her at the dinner table.  Generational fun.

One afternoon I had Finley over so we could make brownies together.  She really got into it;  she poured all of the dry ingredients, put the egg in and did some mixing too!

Looking at this photo brings back memories of my own childhood.  I remember getting to lick the spoon or beaters after my mother made cookies or a cake.  More generational fun!

Last weekend, I was delighted to have Finley stay with us at the cottage.  Well the idea of having her here was exciting.  However, once the crib, the booster chair, the stroller, her suitcase,  the cats in their crates, the food, my bag, Peter’s bag, the other food bag, the blue bag (which carries so many things), the hanging clothes and the clean laundry and her car seat…WELL, really!!!!

Ok so I digress – we joined our friends, Susan & Jim and Joe & Michael for a “catch-up meet-up brunch” at Nagle’s.  We hadn’t seen each other in  a while due to who was sick, who was traveling and who hadn’t been in town.  And I wanted to see Michael before he left for California.  Peter’s birthday was at the end of February, Joe’s birthday had been in the week before AND moved into a new apartment. Michael left his job in CA and was going to be moving to NYC with Joe,and little Miss Fin was in town – so, Let’s Celebrate!

Jim got a large sheet cake with a  BIG RAINBOW on it-this is a running insider joke between them.  So I gave Joe a birthday card with a rainbow, a congratulations on your new home and new job card and Susan added Peter’s name to the birthday cake.

You can see where the first cut was made and if you look at the first picture, you can see that the rainbow is on the opposite side of the cake – Finny wanted a piece of cake with the blue rainbow. Even if we wanted to accomodate her request, it would have been hard to extricate one piece of cake out of the middle – Problem solved.  How about a piece of  cake and Gigi will cut a piece of the blue rainbow and put in it on your piece?  “OK” , she says.

There are so many reasons to celebrate – of course if you listen to the news or read it online you might wonder whether you should party hard or not. How confusing!  “…the national debt is skyrocketing mortgage rates are at all time lows…unrest in the Middle East continues….President O’Bama announces troop withdrawl in Afghanistan…the polar ice cap is melting…scientists have cloned a sheep…and on and on and on and on.

I have a better idea!  Let’s  just celebrate!!! I found this vintage Hors D’oeuvre cookbook from 1981, written by two women from Santa Maria, CA.  The title caught my eye, Company’s Coming. I thumbed through it and fairly quickly determined there was hardly a recipe in there that I might make.  But then I noticed the first chapter was titled Planning It and as I began to read I found myself smiling and nodding –  this is great!

To quote the authors; ” We believe in entertaining 52 weeks of the year with a few days off  in between for getting back into shape, working, and planning the next party…”   “Our motto – ‘Any excuse for a party is a good one’ – is demonstrated by the following list of ideas for giving an hors d’oeuvre party’ .”

According to my calculations we are in the 9th week of the year.  The cookbook lists a reason for celebrating each week and as I read through the list, I realized a couple of holidays and celebrations have been moved around.  For instance, Super Bowl Sunday now takes place in February and not January and the Oscars have been pushed back too.  However, I would like to keep to their schedule so if along the way you notice the dates are off a bit you’ll know why.

Here are their first 9 weeks of ideas and hey, the way I look at it, I don’t see any reason why we shouldn’t play catch-up!

  1. WACKO – (Willey’s Annual Convention of Krackpots in Orcutt) – Happy New Year!
  2. NEW YEAR’S DAY – Recovered from last night in time to watch parade and get our second wind for the Bowl games.
  3. BREAKING NEW YEAR’S RESOLUTIONS – Ours never last any longer than this.
  4. P.O.P. – “Pity Old Pop” for now he has to figure out how to pay all those holiday bills.
  5. SUPERBOWL – We decorate the house with our favorite team’s colors
  6. HOBO – Since we are so poor, we eat out of tin cans and drink from Mason jars.  Dressing the part is always fun.
  7. GROUND HOG DAY – Whether we see our shadows or not, it’s another excuse to party.
  8. PRESIDENTS – Everyone gets in the act.  We come as our favorite President or First Lady and try to guess who’s who.
  9. VALENTINE’S DAY – It’s a real romantic night…Keep an eye on your spouse!
  10. 50’S – Dust off the old 45’s and your records too!

So now you have many reasons to celebrate and as you can see, the party doesn’t have to be BIG, or elaborate – maybe just another couple or a few friends over.  Time to put JOY back in our lives – CELEBRATE!

The 50’s will be easy for me – I might just rock and roll to a few tunes with Peter in our living room.  And those of you who know us, know that we definitely have the 45’s and the record player aka turntable to play them on.  Probably also those clever little yellow discs.

If there was ever a day to eat junk food and/or fattening, artery-clogging food, THIS WOULD BE THE DAY!

But wait, not necessarily! Here is a quick and simple and heart-healthy quesadilla – perfect for the game tonight.

GOAT CHEESE AND MANGO QUESADILLAS

4 oz goat cheese room temperature

4 6″ whole wheat tortillas

1 ripe mango thinly sliced

1 jalapeno pepper thinly sliced (seeded)

1/2 red onion thinly sliced

fresh cilantro leaves

Spread the goat cheese on the whole tortilla and then layer mango, onion, pepper and cilantro on one half.  Fold over and brown and crisp in a large skillet over med-hi heat.

Quick and delicious!

Tasty Tidbits Tuesday

Today I received an email from my friend Ginny, who had come across a tasty dessert recipe which she in turn sent to me.  I was surprised; this isn’t something she normally does so I was eager to read it.  It happens to be a very tasty tidbit from a famous pastry chef, David Guos.  He wrote a best-selling New Orleansinspired cookbook and now has brought a touch of The Big Easy to Virginia where he has opened The Bayou Bakery. Here is his recipe for  Bananas Foster Cheesecake

CHEESECAKES:

3 8oz pkg  cream cheese

1  1/4 cups banana puree (made from 5 very ripe bananas)

1 tsp. powered gelatin

2 TBS cold water

1/2 cup heavy whipping cream

1/4 cup sour cream

1/4 cup sugar

1/2 vanilla bean, cut and scraped

1/4 tsp kosher salt

crumbled peanut brittle for serving

SAUCE:

1  1/2 cups sugar

1/2 cup water

1 cup heavy whipping cream

3 TBS unsalted butter

2 TBS dark rum

Bananas Foster Cheesecake

Make the cheesecakes.  In a large,  heat proof bowl, combine the cream cheese with the banana puree and place the bowl above a saucepan of simmering water.  Heat the mixture until the cheese melts, about 6 minutes.  Meanwhile, in a small bowl sprinkle the gelatin over the water and let it bloom for 1 minute.

In the bowl of a stand mixer with  a whisk attachment, combine the cream with the sour cream, sugar and vanilla seeds.  Whip at a high-speed until medium peaks form, about 3 minutes.

Whisk the gelatin into the banana mixture until dissolved and smooth.  Remove the bowl from the saucepan and add the salt. Whisk in half of the cream mixture, then using a rubber spatula, fold in the remaining cream mixture.

Divide the batter between 6 six-ounce glass cups or highball glasses.  Gently tap the glasses to settle the filling. Cover with plastic wrap and refrigerate for at least 3 hours or overnight.

Make the sauce: In a medium saucepan, combine the sugar with the water and cook over medium-high heat, without stirring, until dark amber about 8 minutes.  Turn off the heat and carefully whisk in the cream. Whisk in the butter and then the rum. Transfer the caramel to a heat proof container, cover and let cool to room temperature, about 3 hours.  (Alternatively refrigerate the caramel for 30 minutes before serving).

To serve, drizzle the cheesecakes with the caramel sauce (save the excess caramel for another use) and sprinkle with crumbled peanut brittle.
