Last weekend we had some really welcome weather.  While it was not all that warm or spring-like, it was sunny and not terribly windy.  Ask anyone who lives on the East Coast north of Virginia and they will tell you this has been one hell of a winter.  And it’s not over yet…BUT let’s revisit last Saturday because as I said the weather was just ducky and to bear witness to that I have some really great duck photos for this FAB FOTO FRIDAY.

Thursday’s Top Ten

The following is a sardonic bordering on sarcastic list of things we New Yorkers feel the need to explain to the visitors, tourists and out of towers who venture into our metropolis!   This list goes beyond my byline of “Oops I bit my tongue in chic”;  I gleaned this information from Thrillst NY. Some things just have to be ‘splained!

  1. We don’t call it “The Big Apple”, “New York” or even “NYC” – It’s The City.
  2. Everybody jaywalks – Go ahead, don’t be afraid, chances are you won’t get hit.
  3. The Italian food in Little Italy sucks – Probably because hardly any Italians live there.
  4. Cabbies don’t take advantage of tourists – They take advantage of ANYONE who doesn’t pay attention.  The answer to “Do you want to take the FDR”? is always NO.
  5. YES, it’s always this loud and NO it doesn’t bother us – For the love of God, stop covering your ears every time a subway screeches or an ambulance goes by.
  6. You have to walk faster than that – We don’t have highways, we have sidewalks.  Would you stop dead in the middle of the Interstate to take a photo of some random tall building? No? Then sweet Jesus don’t do it here.
  7. South Street Seaport is totally irrelevant – We don’t set foot on this anachronistic hell-dock unless we’re going to Beekman’s Beer Garden.  Even then we go in the back entrance to avoid the crowds of people taking photos of the man o’ war.
  8. The streets are short, the avenues are long and it’s a grid – Unless you’re in the West Village; that place is essentially a maze.
  9. That annoying TV in the back of the cab – You can turn it off, and if the credit card swipe below it doesn’t work, use the one above it.
  10. Our bars close at 4 am every nightNone of this 1 am or 2 am nonsense or “4 am on Saturdays only” – We booze it up every night till 4 am and still make it to brunch then next day.

BREAD, the staff of life, gimme the dough/money!  Bread has always played a major role in our lives and diet.  When I was growing up, we lived in area where the milkman delivered milk to your door and the bread man delivered bread.  They were both white;  by that I mean we were getting pasteurized white milk and ultrarefined industrial white bread, so prevalent in the 50’s.  My dad bought Wonder bread for us, my friend, Susan’s mom bought Sunbeam.  Once in a while my father would bake delicious Italian bread with tiny bits of pork rind in it.  Warm from the oven and slathered with butter…no wonder I take a statin every day now!  Then along came Dr. Atkins and bread became the enemy.  The war against carbs still rages on, however, real bread in its naturally leavened, long-fermented hearth-baked form has enjoyed a comeback, especially in New York City where there are several well-known and much-touted bread bakers.  We have Eli Zabar, Tom Cat’s Noel Labat-Comess, Bread Alone’s Dan Leader to name a few. Bakeries such as Amy’s Bread, Sullivan St. Bakery and Balthazar Bakery produce such delicious bread, you really can make a meal out of it! 

Here are New York’s top 5 new-wave breads:  Try not to drool on your keyboard.

1.Roberta’s – CITY WHITE LOAF – Why would Melissa Weller leave the kitchen Per Se to toil in a converted shipping container? Three words: Wood. Fired. Oven.  Her bread has a dark and crackling crust, with a moist crumb.  It’s beyond “Rustic” in looks, more like a throwback to some communal oven in 19th century Paris.  

2. Nordic Breads – FINNISH RUIS – If you’re a New Yorker, you know rye bread.  However, there is a Nordic newcomer among us and this bread is dark, dense, flat as a Frisbee and has a tang that intensifies as you chew.  High fiber content, organic and made with a sour-dough starter smuggled in from Finland. Produced by Nordic Breads.

3. Hot Bread Kitchen – M’SMEN – Their repertoire ranges from corn totillas to Sephardic challah.  Their mission is to train immigrant women to parlay their native expertise into management positions in the industry.  Headquartered in East Harlem, the most extotic and delicious of their offerings is m’s men, a rough-textured, butter-and-oil enriched North African flatbread that’s rolled, slicked, and folded into a delicious envelope of dough. Rich and flaky like a croissant with the tender-crisp chew of paratha, the m’s men is girdled golden-brown and traditionally eaten at breakfast in Marrackech.

4. Runner and Stone – BUCKWHEAT AND PEAR – Peter Endriss, formerly of Per Se and Bouchon Bakery is creating such wonders as a Cheddar-and-hard-cider loaf, a sourdough whole-wheat walnut with dried sausage and red wine and a pain au chocolate encasing port-infused figs. Local grains, natural leavening, and long fermentation all conspire to make his squarish buckwheat pear loaf a thing of crusty, nutty beauty, its speckled crumb a triple-grained canvas (rye and spelt too) for nuggets of sweet poached fruit.

5. Roman’s – SPROUTED SPELT – Baker Austin Hall appropriates a corner of Roman’s kitchen after hours to bake breads for service and for retail sale on weekends.  He makes a naturally-leavened sprouted spelt, a sturdy burnt-umber sourdough loaf with a crackly, darkly caramelized crust and crumb riddled with New York State spelt berries. It’ a health bread for hedonists.

I will continue this list with more mouth-watering breads next week.

A Matter Of Taste

He loved it, she hated it. Things were going to change around here she thought.  No more college dorm room décor. Perhaps some nice yellow curtains would brighten up the den.  Moving some furniture around wouldn’t be a bad idea either.  Gathering up the piles of discarded newspapers, she hauled them out to the trash barrel.  After polishing the furniture and sweeping up the dust bunnies, things looked better already. But, something was still not quite right

PHOBIAS and IRRATIONAL FEARS

Human beings experience hundreds of different phobias and overwhelming fears and anxieties. Many are deep rooted, and find their origin in long forgotten childhood traumas. Others develop more recently and are traced to reactions to frightening events or complex relationship dilemmas. When these phobic reactions actually interfere with normal daily functioning,professional intervention is the best course.

Here is an example of the 2 origins of an airplane flying phobia: the first patient was traumatized at age 11 when flying with her newly divorced parents,the plane hit very unsettling turbulence and she was very uncomfortable flying as an adult.  The second patient, panicked at the possibility that her husband was cheating on her,refused to fly to various job assignments, fearful that the husband would carry on his affair while she was gone! Note….the same fear with two very different origins, and treated in very different ways.

The most effective treatment for irrational simple phobias is called “flooding” and involves gradual exposure in imagery and in real life to the phobic object or situation. More complex phobias( eg. The fearful wife above) are best treated with cognitive behavior therapy(CBT) involving assertiveness training, meditation and relaxation techniques, and challenging irrational needs for dependence,and superstitious beliefs.

I was catching up on some of my emails and somehow one of them led me to a web site, How Stuff Works.  It was just full of interesting tidbits of knowledge and trivia.  Just perfect for my Thursday Top Ten list.  The following information comes from their site.  Why are these lies BIG? Because deceit whether it’s in the form of a lie, a hoax, a forgery can affect a lot of people, a huge ripple effect takes place.

Supposedly,  the truth can set you free.  But for many, deceit holds the key to money, fame, revenge or power, and these prove all too tempting. In history, this has often resulted in elaborate hoaxes.

  • THE TROJAN HORSE; If all is fair in love and ­war, this might be the most forgivable of the big lies. When the Trojan Paris absconded with Helen, wife of the Spartan king, war exploded. It had been raging for 10 long years when the Trojans believed they had finally overcome the Greeks. Little did they know, the Greeks had another trick up their sleeves.In a stroke of genius, the Greeks built an enormous wooden horse with a hollow belly in which men could hide. After the Greeks convinced their foes that this structure was a peace offering, the Trojans happily accepted it and brought the horse within their fortified city. That night, as the Trojans slept, Greeks hidden inside snuck out the trap door. Then, they proceeded to slaughter and decisively defeat the Trojans.
  • HAN van MEERGEREN: Was a painter who felt unappreciated and thought he could fool the experts into recognizing his genius.  He forged a Vermeer and sold it, so he continued to create Vermeers.  He sold one to a prominent Nazi and when the war ended, the Allies considered him to be a conspirator for selling a national treasure.  To prove his innocence he had to paint another under observation and thus received a light sentence of one year.  Unfortunately he died of a heart attack two months after his trial.
  • BERNIE MADOFFI don’t need to go into this guy too much since we all know what a lying crook he was!  In 2008, he confessed to having conned about $50 billion from investors who trusted him with their savings. Madoff used the f­ormula of a Ponzi scheme to keep up the fraud for more than a decade.This classic lie is named after the notorious Charles Ponzi, who used the ploy in the early 20th century. It works like this: A schemer promises investors great returns, but instead of investing the money, he keeps some for himself and uses the funds from new investments to pay off earlier investors.
  • ANNA ANDERSON ALIAS ANASTASIA: In 1918 the Bolsheviks massacred the royal Romanov family killing Czar Nicholas II and his wife, son and four daughters.  Rumors began that one of the children had escaped and soon claimants began popping up. The most notorious was Anna Anderson who upon being committed to a hospital after a suicide attempt, claims to be the daughter, Princess Anastasia.  She bore a striking resemblance to the young Anastasia.  Some family and acquaintances believed her to be so, most didn’t. In 1927 a woman came forth and declared Anna, (actually  Franziska Schanzkowska) to have been her former roommate.  Anna continued her legal proceedings to lay claim to the family fortunes but ultimately lost.   Years later, upon the discovery of what proved to be the remains of the royal family, DNA tests confirmed her to be a fake. In 2009, experts were able to finally confirm that all remains have been found and that no family member escaped execution.
  • WATERGATE: In the summer before President Richard Nixon‘s successful re-election to a second term, five men were caught breaking into the Democratic National Committee headquarters, housed in the Watergate Hotel. As details emerged over the next year, it became clear that officials close to Nixon gave the orders to the burglars, perhaps to plant wiretaps on the phones there. The question soon became about whether Nixon knew of, covered up or even ordered the break-in.  In front of 400 Associated Press editors, famously proclaimed, “I am not a crook.” He was talking about whether he had ever profited from public service, but that one quote came to represent his entire political career.  It was a lie that came back to haunt him.  The tapes were subpoenaed.  The tapes were exactly the smoking gun needed to implicate Nixon in the cover-up of the scandal. They revealed that he obviously knew more about the matter than he claimed. Upon the initiation of impeachment proceedings, Nixon gave up and resigned from office. The scandal left a lasting scar on the American political scene and helped usher Washington outsider Jimmy Carter into the presidency a few years later.

Bring On The Bacon

It’s FAT TUESDAY and I for one am planning on indulging…for tomorrow brings on a more than a month of deprivation.      For years I had the habit of NOT giving up any food that I particularly loved but rather DOING something(s) good for others.  Now I’m back to giving up sweets because, well for my own health and well-being and vanity the mirror and my jeans are yelling at me to say no to chocolate, ice cream, cookies and maybe almost everything white.  OK, so for selfish reasons I will deprive myself with an eye to a slimmer me by Easter Sunday.

BUT today is a very different story…tonight I’ve been invited to be a guest at the Annual Tasting Event sponsored  by    C-CAP-Careers through Culinary Arts Program.  WOW!! New York’s Top Chefs will be gathered at Pier 60 tonight offering up tasty tidbits so tonight I feast and tomorrow I fast!

Here’s a tasty tidbit you can make yourself and feel like a million bucks.

BILLIONAIRE’S BACON

1 lb thick cut bacon

1/4 cup maple syrup

1/2 cup brown sugar

coarse ground black pepper

Preheat the oven to 375 degrees.  Line a baking sheet with aluminum foil and top with a roasting rack.  Spray the rack with a non-stick spray.  Place the bacon in strips on the rack.  Brush the bacon with the maple syrup.  Sprinkle brown sugar over bacon and then grind some black pepper.

Bake in oven till sugar begins to melt, about 15-17 minutes.  Let cool 5 minutes.

Do you have the “Disease to Please”????

Approval cravers are terrified that if they garner disapproval from certain friends and family, these people will disappear. Many of my patients have told me that they genuinely fear that if they anger a significant person in their life, that person would drop away forever. The mental distortion operating here is that all of the wonderful years of friendship and warm shared experiences will be negated by a single incident of disagreement.

While that may occasionally occur,most good friends are able to overlook single incidents and talk things over.

In a 1971 article Margaret Adams wrote about the “compassion trap “where females in particular believe that their very existence is defined by service and compassion for others. Overcome this self defeating philosophy whenever you are annoyed or upset with another’s behavior by the following steps:

1. Express your upset directly without candy coating it.

2. Clarify your expectations of the other person and the goals you desire

3. Challenge your internal irrational fears of retribution

4. Prepare for resistance or refusal from the person to go along with your desire or goals by having in your mind an alternative or compromise plan .

Dr. Barry Lubetkin offers us some sound advice and a very good tip on how to keep the “caring for each other” in our marriage. 

Mental health for marriage.

Marriage is in trouble. Not only has the divorce rate of 45 to 50% not abated but the rate of cheating amongst both men and women continues to increase. And what of the future ,where couples texting and not talking has become the standard way of courting and communicating.
 
Many of my married couple patients report that “lack of appreciation and compassion ” for the other is a major potential destroyer of relationships. While I believe that EVERY couple should enter couples therapy for regular tune ups throughout their time together, that is an ideal that most won’t follow. So here’s a tip to help strengthen your relationship:
 
Each person creates a CARING LIST, where you list the 5 specific ways that your partner can make you feel cared about and cherished……….ex. “Kiss me each morning when you leave for work”……”prepare dinner once a week for the kids”…….”tell me about your day and ask me about mine”……..give me a brief massage every Monday evening to unstress me after work”.  Make the requests specific and behavioral, not vague like “make me happy”
 
Exchange the lists, post them somewhere in the apartment or house, and each person is to fulfill at least three of the others requests each week. Make new lists when needed. Don’t play tit for tat by waiting for your partner to do your requests first. Note and discuss at the end of the week how each of you did in fulfilling the caring needs of the other.  It works! Try it!

I don’t usually post recipes on Sunday but lately I’ve been on a sweet tooth binge and this recipe just jumped off the page at me.  It is a modified version of Shortbread Candy Corn Kissed Brownies, posted by Jenny of Picky Palate.   I found it on Gojee and it comes from another blog, Mommiecooks. Just goes to show you how a good recipe travels kind of like bad news!

For the crust:

1 1/2 cup mulched pretzels

1 stick of melted butter

1/4 cup sugar

For the bars:

1 pkg of caramel kisses

1 stick of butter melted

1 cup of brown sugar

1 tsp of vanilla

1/4 cup of evaporated milk

1 egg

3/4 cup of flour

1 tsp baking soda

1 tsp milk

Start with the crust; Put a few handfuls of pretzels in your food processor mulch up till you have 1 1/2 cups worth.  

Dump into 9×9 baking pan and add in melted butter and 1/4 cup sugar.  Mix up and press into the pan.

Cook in oven at 350 degrees for about 8  minutes.  Remove and let cool.

Melt second stick of butter on low heat.  Once melted, remove from heat and add in brown sugar, vanilla, and evaporated milk.  Next add the egg, then the flour and baking soda. Mix all ingredients.

Lay the kisses in rows on top of the cooled crust.

Pour the batter over the kisses.

Bake in 350 degree oven for about 25 minutes.

While cooling, take any extra kisses and melt them in double boiler with tsp of milk.  Spread melted kisses over the top of your bars and put in refrigerator to set about 3-4 hours.
